You can install multiple modules for PHP versions so you can pick and choose what you want to test a variety of server configs. You're not risking the live site. Then you can move/copy the migrated site from local to the live server, e.g. with Akeeba Backup/Kickstart and restore to the live server and it should be a running copy from the start.
